Creamy Vegan Caesar Dressing with Nutty Vegan Parmesan

I absolutely love eating salads for lunch. I never get tired of them because there are so many ways to make them! They fill me up, leave me feeling energized and nourish my body.

One of my favorites is a simple and delicious caesar salad. I don’t, however, love how the traditional fat-laden varieties make me feel. That’s why I came up with this creamy vegan caesar dressing made with hemp seeds. It’s light, refreshing, tastes amazing and makes me feel amazing! This dressing goes really well with grilled salmon and chicken, or simply on it’s own.

And my macadamia nut parm is pure bliss and so easy to whip up. In addition to your salads, try it topped on pizza, steamed veggies, and eggs. You could could also use cashews for this recipe, but macadamia nuts are my favorite nut. They feel like a real treat to me! I love to buy mine (along with a slew of other delicious products) from Royal Hawaiian Orchards. I typically stick to their natural variety.

My secret to the perfect kale caesar (pictured here) is to massage the kale for 2 to 3 minutes. This action softens the kale, makes it more vibrant in color and actually changes the flavor too. It goes from being slightly bitter to nuttier and sweeter. Overall, I strive for some type of balance in all my salads. I like to pair crunch with soft; spicy with creamy; and acidic with fatty. Think avocados, soft cheeses, or a creamy dressing like my dreamy vegan caesar 🙂

Creamy Vegan Caesar Dressing

Ingredients

  • 1/4 cup hemp seeds
  • 1/2 cup plant or nut milk almond milk works well
  • juice from 1/2 lemon
  • 1 clove garlic
  • 2 Tbsp. nutritional yeast
  • salt to taste

Instructions

  1. In a food processor, blend all ingredients until creamy. 

    Store in fridge for up to one week.

Macadamia Nut Parmasean

Prep Time 5 minutes

Ingredients

  • 1/2 cup macadamia nuts
  • 2 Tbsp. nutritional yeast
  • 1 tsp. garlic powder
  • salt to taste

Instructions

  1. In a food processor, pulse all ingredients together until crumbles form.

    Store in fridge up to one week.
