Rainbow Veggie Pizza on Cheesy Almond Flour Crust

My hubby and I have been eating homemade pizzas every Friday night for months now and I am not mad about it. With almond flour crust as a canvas for whatever you are craving, how could you? This past Friday I was solo and so I already knew I was making pizza for one, and I was planning on just making my normal almond flour crust, but then I was struck by a delicious though. I made the crust cheesy via nutritional yeast and holy moly am I glad I did that. This crust is so flavorful and delicious, and will now be my new normal 🙂

And who doesn’t love a gorgeous array of colorful veggies. Pretty and delicious? It doesn’t get much better than that.

Rainbow Veggie Pizza on Cheesy Almond Flour Crust

Ingredients

Cheesy Almond Flour Crust

  • 1 cup almond flour
  • 1/4 cup nutritional yeast
  • 1 Tbsp. garlic powder
  • 1 Tbsp. olive oil
  • 1 whole egg
  • salt to taste

Rainbow Veggie Toppings

  • 3 leaves dinosaur kale chopped
  • 1 small zucchini sliced thin
  • 1/4 small red onion sliced thin
  • 1/2 yellow bell pepper sliced
  • 6 leaves fresh basil chopped

1/2 cup Rao's Homemade Pizza Sauce

6 small slices of Kerrygold Grass Fed Sweet Cheddar Cheese

Instructions

  1. Preheat oven to 375. Line a square pan with parchment paper. 

    Mix all crust ingredients in a medium size bowl until combined. 

    Pour mixture into prepared pan and press down with hands or spatula until evenly laid out. Place in oven for ten minutes or until golden. 

    While crust is baking, pan fry zucchini rounds and yellow pepper until soft or brown. 

    Remove crust from oven and top with sauce, cheese slices, and veggies. 

    Sprinkle with sea salt and return to oven for five minutes or until cheese is melted. 

    Top with fresh basil once removed from oven.
