Savory Cheddar Crispy Waffles (Gluten, Grain & Dairy Free!)

I love waffles. Like LOVE them. My hubby prefers pancakes, which hello, I obviously love pancakes too, but not it’s not the same kind of LOVE that I have for waffles, ya feel?

Now that we have that clarified, let’s also address another important point. For the love of all things breakfast, please do not use your pancake recipe (or mine 😉 ) to make waffles. It’s not okay. Pancakes are light and fluffy and even a bit spongy. Waffles are thick, crispy and sturdy. Waffles should definitely not be floppy and the syrup should NOT seep into waffles like a sponge as in the case of pancakes. Ingredient- wise, the “crispy” exterior of waffles is due in large part because waffles are made with much more fat than pancakes. Whew, I am so glad I got this off my chest because I’ve seen it happy too many times and I really never want to be faced with a floppy waffle again. Thank you so much.

Now, onto these cheddary, savory and crispy waffles.  I am so in love with them. Like I said, I love all waffles – vanilla, chocolate chip, blueberry, pumpkin – the list goes on, but savory waffles? Savory waffles take it to a whole other level! The flavor of these are so yum! Cheddar (a la nutritional yeast) + turmeric + smoked paprika = the perfect trio. Like any waffle recipe, enjoy these for breakfast, brunch, lunch or dinner. Pair ’em with traditional breakfast staples like pasture-raised bacon and eggs or you could totally turn these into a sandwich! My hubby loves sweet and savory so he drizzled some maple syrup over his, while I stuck to a small pat of grass-fed butter and put my egg on top (I love runny yolks!). I think I will definitely drizzle some raw honey on them next time because I love cheese and honey together. 🙂

Cook these in a waffle iron like you normally would with one small exception. The batter will not be runny like traditional waffle batter. This recipe makes two waffles so separate the batter equally into two parts. Before putting the batter in the iron, flatten it out a bit with your hands so that it fits (or almost fits) the shape of your iron. Yes, a small, but necessary (and so worth it!) step.

Savory Cheddar Crispy Waffles (Gluten, Grain & Dairy Free!)

Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup nutritional yeast
  • 1 Tbsp. turmeric
  • 1/2 Tbsp. smoked paprika
  • 1 tsp. baking soda
  • pinch of sea salt
  • pinch of ground black pepper (needed to activate the turmeric!)

Wet Ingredients

  • 2 whole eggs
  • 1/4 cup olive oil

Instructions

  1. Preheat your waffle iron and spray with a nonstick spray if necessary. 

    2. In a mediums size bowl mix together all dry ingredients. 

    3. Once combined, stir in eggs and olive oil. 

    4. Separate batter into two parts and flatten out with your hands to fit the shape of your waffle iron. 

    5. Cook until you have your desired texture (I like mine extra crispy, so I bake mine in the waffle iron at a med-high temp twice through). 

    6. Enjoy!
