Crunchy Cashew and Rosemary Chicken (So Flavorful!)

Raise your hands if you love cashews! I am wildly addicted to raw, organic cashews and I have been craving them regularly for the past year. I eat them every single day whether by the handful, in a variety of my cheese recipes (my creamy nacho dip is amazing as is my sweet cream cheese!), in salads, on top of smoothie bowls, basically in all my meals!

I love making chicken tenders with everything from granola, almond flour, pecans and other crunchy add-ons. They lend lots of flavor, texture and healthy fat! Cashews are hands down my favorite nut and I’m all about rosemary right now! Given all this, it was only a matter of time before I decided to take one of my staple dinners (chicken and a veggie) to a whole other level with a crunchy coating of cashews. The cashews and rosemary made the perfect pairing!

For the Crunchy Coating: 1.5 cups raw cashews + 4 sprigs fresh organic rosemary (stem removed) + 1.5 tsp. garlic powder + 1 tsp. thyme + pink salt. Pulse all ingredients together until crumbs form and dip organic chicken breasts in 1 whisked egg and then dredge in cashew mixture until well coated. Bake at 400 degrees for 20 minutes!
